Semolina Fudge

Just another simple and quick recipe for those with a sweet tooth. It tastes a bit like Semolina Halwa but then these are a bit more chewy. I have heard from a few people that these are called Aflatoon but then I wasn't sure because the Aflatoon I tasted in most shops, tasted very very different and had a different texture as well. Anyway this still tastes nice and is very very quick and easy to make.

What you need:
1 cup semolina
1 cup powder milk
1 cup whole milk
1 cup sugar
3/4 cup butter / ghee
1/4 cup Almonds/Cashews
pinch of salt
pinch of saffron soaked in few tbs milk

1. In a non stick pan  mix semolina, milk powder, salt, sugar and butter/ghee properly and then switch on the flame on low heat.
2. Roast this until it changes its color a very light brown. Make sure you keep an eye on it because it gets burnt easily.
3. Now add the whole milk and stir it until it starts to get dry. Once you notice that it is beginning to get dry add the saffron and cook it a bit more.
4. Once this starts to leave the sides of the pan and you see that it is giving out the butter/ ghee, then you know it is ready.
5. Spread it out evenly on a flat plate greased with some butter. wait for it to cool down slightly and only then  start cutting. Garnish it with the nuts of your choice.. I decided to add cashews but you can add any other of your choice.
6. Put this int he fridge for an hour and then serve.
